Pumpkin Soup
Ingredients:
¼ cup butter
16 oz. pumpkin flesh,
cooked
3 cups vegetable stock
½ cup half and half
¼ teaspoon ground
nutmeg
⅛ teaspoon ground ginger
½ teaspoon cinnamon
Directions:
In a large saucepan
heat butter and add pumpkin.
Add spices and cook,
stirring for 2-3 minutes.
Bring to a boil, cover
and simmer for 12-15 minutes.
Place a third of the
soup in a blender with a third of the milk and blend.
Pour into a large bowl.
Repeat with the
remaining soup and milk, pour the whole
lot back into the saucepan.
Heat thoroughly and
serve.
