Dried Fruit Pudding
Ingredients
2 cups dried fruit mix
(apricots, prunes, cherries, apples)
3 cups fruit juice (juice of
any of the above fruits or cranberry or combination)
½ teaspoon nutmeg
1 teaspoon cinnamon
Pinch of ground cloves
3 tablespoons quick-cooking
tapioca
1 cup heavy cream
1 teaspoon vanilla
1 tablespoon maple syrup,
honey, or confectioners’ sugar
Directions
Combine dried fruit, juice, nutmeg, cinnamon, and cloves in
a large pot. Heat on low for ½
hour.
Drain, reserving the liquid. Set aside a few fruits of each
kind.
Measure the reserved juice and add more if necessary to make
2 cups add to pot.
Stir in tapioca and let stand for 5 minutes. Bring to a boil and cook it a few minutes,
stirring constantly.
Remove the pan from the heat and let it stand 20
minutes.
Combine the tapioca pudding and the cooked fruit.
Chill.
Whip the cream, vanilla, and sweetener until stiff peaks
form.
Layer the pudding and whipped cream, ending with whipped
cream on top.
Decorate top with a couple pieces of reserved fruits.
